I'd like to know what would be the best way to change the text color of the chat. It's now white on a white background (is that default for Odoo online or does it have to do with the choosen theme?).

I found out that the default color of the Chat is determined by the theme style setting and especially the text color of the first color preset. When this is white the text won't show:
Dear you can change the color of chatbot icon as well as text by follow below mentioned steps:
Live Chat app --> Website Live Chat Channels --> Tab (Options)
