Good question but unfortunately the field published and the e-commerce preferences related to out-of-stock are managed only in the product template and not in the variants.

It's only possible to exclude variants that aren't available, for this:

1. Configure the attribute you want to modify

2. And Exclude what isn't available

3. In the Webshop the value will be brighter and when choosing the combination a warning will appear.
