Is it possible to assign a given pricelist to a group of customers, rather assign it to every single one?

How do you define a group of customers? There is no customer group defined in Odoo standard, see https://www.odoo.com/forum/help-1/question/customer-group-145107
But if you simply want to save efforts in assigning pricelists to multiple customers, you can use the OCA mass editing module (https://odoo-community.org/shop/product/mass-editing-1568?order=total_download_count+desc) or export and reimport the related customers by .csv.
