In version 6.1 can be setup the language for every partner. This determines the language of the printed documents for every partner. This functionality is very helpful. I can not find this possibility (field) on the customer and supplier forms in version 7.0. Any suggestion?

The language field is on the "sales & purchases" tab of the customer form. By default, when you create a new customer or supplier, it takes the language of the user. (from your preferences)
The language field on the customer sales tab works well. it picks the correct language. the problem is that in RTL languages the field is printed incorrectly. i.e. if the name is "shipping address" it will appear as "sserdda gnippihs" or for a simpler example "Fabien" will appear "neibaf"
In addition to Fabien's answer, there is the possibility to change the default value of a new customer.
In order to do that, you have to activate the developer mode (in the "About OpenERP" menu when you click on your username in the top right corner of the screen). Then, select the desired language in the customer form as Fabien explained, and in the developer drop-down list, you can select "Set defaults" and add a rule to force the selected language as default for new customers.
I think this would be good to have as a non-developer option. A user may want to use the English interface with French customers.
