In the module Email Marketing, how can i change the adress that is used to send the email ?
When I try to send my campaigns it uses "notification@boutabout.org"
instead, i would like it to do something like campaign.name@boutabout.org
such as : clients@boutabout.org, brewers@boutabout.org ect..
How can I do that ?
Change in following fields in email marketing goto email marketing >>mailing >> open record and changes value according to your need

I tried your solution using the following fields :
"Send From : clients@boutabout.org"
and I am still receiving this email as if it was sent by "notification@boutabout.org"
