I created a manufacturing order for a product that has only one BoM. It takes 2 weeks to build the product so during this time some components are used to build the product but the product is not finished yet so I can't mark it as Done. But I want to let Odoo know that we have used up some components during the process, even though the product is not done yet. How to do that?

Setup two ot three step Manufacturing. Then pick just the components you use. They will move out of stock and the ones you don't pick will stay in stock.

To post consumption, you also need to post that something has been finished. What has been finished must also have a value in stock and accounting.
The solution can be to have multilevel manufacturing, where you produce a semi-finished product to stock and consume what is available. The a new order to for complete the process.
The challenge might be that this is not a fixed situation, so you cannot split the bom in two. It is possible to modify components manually in a manufacturing order.
