I do freelance programming work for a couple clients. So far my process involves using Toggl to track time (i love the convenience of their browser extension) and a Word-like document that I created ages ago that I make copies of and fill in tracked time whenever I'm invoicing a client. I've been passively looking for ways to make the process easier/more automatic/more scalable in case I ever take on more clients, but right now im mostly just curious.
I've experimented with various open source solutions like InvoicePlane and Odoo and i really love the idea of giving clients access to an online portal to see all their billing stuff up front and pay me through stripe sounds awesome, but that would be mostly icing on the cake and likely not worth doing if i cant also automate my existing workflow.
I stopped trying to integrate toggl with invoiceplane because it was taking too long for me to figure out (even as a developer and open source contributor who will spend way more time than necessary on something). I have also played with Odoo, but it seems to require me to do a sales order first, before being able to log time in a way that appears on an invoice, and even then I have to go through quite a lot of clicks to get that working. Sending clients quotes in the form of sales orders would be a nice thing to be able to do if i need it later, but for now I'm wondering if its possible to disable it for the sake of getting the Odoo workflow as streamlined/short and efficient as possible so i can spend as little time doing billing and invoicing as I can.
Is this something Odoo can let me do?

As a minimum, you would need to create one sales order per client. You could create one per project if needed. Most Odoo partners use Odoo to raise invoices so it is usable.
Are you looking at Community or Enterprise?
