It is possible to leverage the Internal Logging feature - this is only available to those in the Administrator / Settings group.
Create an Automation Rule for the Employee model, triggered on save, when updating the Hourly Cost field:
The Type in this case is Execute Code:
You can see what is logged via the Settings --> Technical --> Database Structure --> Logging Menu:
If your implementation is being undertaken by Odoo or an Odoo Partner, this approach adds "lines of code" to your database and may require a maintenance contract to be supported in the case of bugs and upgrades.
The actual lines of code added to your database may differ from what you see here depending on your requirements and any additional error checking added by developers.
Customizations require a subscription to the Custom plan and are not available with the Standard plan.
