How can I make it so that one variant of a product is "Manufacture" and the other variants are stock items?

Your question is not clear. Manufacture is a route to replenish. Stock item is that you manage the product in stock. Describe your business case better, and maybe you get some help.

Thanks for your reply. Example. I have a black t-shirt in S, M, L but in XL we dont keep in stock and Make To Order/manufacture.

Yes, so in this case we do manufacture all the T-shirts but I guess we want a max-stock of 0 for the XL variant. So I guess we could make such a rule pr variant? Also a separate product template for the XL will make it a separate product on the webshop, witch doesnt make sense for the customer.

Yes, Reordering Rules are per variant. So maybe you can set it up as Make to Order and if any Manufacturing Orders do get created for the variants you keep in stock you just delete them

Hi Stian:

You will need to create 2 separate products - one for the S/M/L sizes as a Stock item and another for XL as a Make to Order/Manufacture item.

The "Manufacture" / "Buy" route is set on the product template not on the variant. 

However, in Odoo 13, a Manufacturing Order / Purchase Order is only created if there is no inventory available.   But Odoo would still create a Manufacturing Order for your "stock item" if there is insufficient inventory.  

So it might be possible, but it's simpler to have different products for what you manufacture to order and what you keep in stock.
